Katrina\'s Amazing Banana Cream Pie Recipe

   Serves 1 Pie
  • 1 c. Sugar {Separated}
  • 3 Tbsp. Cornstarch
  • 3 Tbsp. Flour
  • 1/2 tsp. Salt
  • 2 C. Milk
  • 1 Beaten Egg
  • 1 1/2 tsp. Almond Extract {Separated}
  • 32 oz. Real Whipping Cream
  • 1/2 tsp. Vanilla {optional}
  • 2-4 Bananas
  • Frozen Pie Crust or Your Favorite Pie Crust Recipe
  • Combine 1/2 c. sugar, the cornstarch, flour, salt, milk, & egg in a medium saucepan. Bring to a boil stirring constantly until thickened. Add 1 tsp. almond extract. Boil on minute. Transfer to a bowl. Cover with saran warp and place in the fridge until chilled.
  • Bake the pie crust according to directions. Cool & slice up 2-4 bananas into the bottom of it.
  • Whip the whipping cream until thick, add 1/2 c. sugar, 1/2 tsp. almond extract, and 1/2 tsp. vanilla if desired. Blend completely. Separate 1/2 of the whipping cream mixture into a separate bowl. Fold the pastry cream into 1/2 of the whipping cream mixture{small lumps may be left, they are fine & will not effect the taste}. Blend well. Pour over the top of the bananas, spread evenly. Pour the whipping cream on-top and spread evenly. The Cream will be at least an inch above the pie crust. Enjoy!
